Roasted Chicken

Roasted my first chicken the other day. I've always done pan roasted chicken breasts, and I was put to the test of doing a whole bird. I did use this recipe from Ina Garten as I needed to follow a recipe. Ive used her other recipe for a rib roast last Xmas that turned out amazing, Ina has simple and tasty recipes to use. So now that I know the basics are to roasting a chicken I can now add my touches to it... I think next time instead of roasting potatoes Ill do a mash and use more fennel.
The skin was so crispy and delicious!


Its kinda nuts that a whole chicken can be cheaper then just buying parts. this was a 4lb chicken and it cost 5 bucks.

Time Warping.

Man its been a minute! about a month and a half to be exact! I have compiled a few photos of whats been happening in that time period.I got a really SHARP new knife from Joe & Michelle (thanks guys!) Went back to Hawaii to celebrate the life of a Kenny Brimer. Had a few Swedes visit us for Halloween. A late in the game BBQ (Nov 13th) with some friends breaking in a new Apt. and Celebrating Fay's Bday.  Of course Turkey Day in which most of the cooking was shared I made mash potatoes and a big batch of Kale. The turkey was cooked by our new roomie Elska. She used a brine over night and it came out amazing, Quinn named her Turkey Lady, also she baked 2 pies...pretty much killed it....MVP....for sure. Having Elska live with us has been awesome, a great homie who loves too cook yummy food. Add couple of pork chops and marinated steaks later to this and we are at this point in time....






 Yep totally random and mix just like my life....and remember its always sweeter when you got bros to spend it with...

Left overs/Fried Rice


Had some leftys over... We made garilc shrimps the night before and a chicken breast that needed to be cooked... So with the chicken breast I diced it and seasoned with curry powder and cooked it with sesame oil...Add rice, more curry powder, veggies, diced shrimps, and 2 scrabbled eggs... boo yea.

Mah Ma Po Tofu

I've Been making variations of this dish for a minute now, I tend to like it on the milder side of things...In this version I used a ton of minced ginger and garlic that I sauteed with the pork. this gave it an amazing sweetness to it. I added peas, carrots, black bean sauce, chili sauce, vegetable stock, corn starch, jalapenos, and green onions to make this one a winner.
I added fresh peanuts as a garnish which gave it a nice crunch and flavor to the dish...Honestly we couldn't stop eating it! The ginger made it zing!

I < 3 GARLIC.


I really love garlic...I can eat it with almost anything....I got some garlic from the farmers market and made some garlic chips... Its nice to get garlic with fresh dirt on it.... Cold pan cold olive oil add garlic and keep an eye on it...don't want over cook it....

I added my garlic chips to some instant ramen...with adding some fresh ingredient's to ramen it can make it a 100 times better then "just noodles"...I added fresh green onion, and fresh corn that I sauteed in the olive oil from the garlic chips... Nice and Crispy then they get nice and soft from the soup....

Hang the leftovers...


This is a quick fix when I was hungover the other day....sometimes playing tunes till 4am will get you a little sore the next day...You know some grease will fix you right up! Leftover ground beef from tacos with black beans fried rice and then a nice egg centered! this actually slid off the pan in one piece. The rice and egg formed a crispy layer to keep it all together....

SUMMER OF SABA!!!!!

My house is infected with eating SABA and we cannot stop it!!!! I think we might need an intervention but its too good to give up. Seriously I think we cook this twice a week...Yuri I think does 3 days a week and has a secret stash some where in this house! she's always up to something....

Wash, then score it with a knife, toss some salt and oil on it and into the broiler for 8 minutes. A squirt of lemon and DONE.

You too will be hooked by the power of SABA.....be careful this is highly addictive....

Kuyas.


Rhandy Tambio...This guy. I first met this dude in Hawaii through the In4mation boys, pre In4mation. probably 2002 or something. Whats funny is that we both grew up with the same friends but never met each other till later in life. He claims the first time I met him I yelled at him for ordering a slice of pizza with no meat on it...serves him right! he tries to imitates my voice when he tells this story"where's the meat?" (no homo).

Anyway later down the years he moves to NYC to start a new chapter in his crazy life and we become great friends, and little did we fricken know we share the same fricken Bday...life's weird. This bday he blessed me with a photo he shot when he first moved to NYC. Its a photo of when we first went skating around the Brooklyn Banks...later I was told the only reason Rhandy wanted to skate the Banks so often was because L&L BBQ was down the street! FAT BOY! Hahaha...

So in return for his bday I cooked up some Shrimp Truck style shrimp. If you are not familiar with Hawaii there are shrimp trucks all around the North Shore and Kahuku that are super yummy... Just a truck with shrimp plates butter garlic some herbs over rice....But lots of BUTTER & GARLIC man the gravy from this over rice is sometimes better then the shrimp! FAT BOY!!!
This is a great meal to eat and cook! and it was great sharing it with a good friend.

Friends in Town/Inspiration

Michelle and Joe came to visit from SF and live here in NYC. I've met Joe through a great friend of mine Mannie Monis, Mannie is one eclectic Filipino, The guy never ceases to amaze me on his views about the world he lives in... Anyways Michelle is one of our new roommates as she transferred jobs from SF to see how life is in the Big City of Dreams...I think she's gonna do good here.

While Joe was here I cooked a few times and let me tell you I was a bit nervous to be cooking for this guy because A) he's a big ass Gorilla and B) the level that he cooks at is BEAST. I managed to not shoot any of this due to just being in the moment with friends and having a good time... Stand outs were Okra and Jalapeno tempura, Shrimp Truck Style Garlic Shrimp and Broiled Saba Mackerel. After seeing Joe just attack the food I cooked, it made me feel like I was on the right track and let me feel more loose in my kitchen and to experiment more with what I had to cook with etc...
So I made this... its boneless chicken thighs lightly floured in a butter wine sauce with onions, garlic, shiitake mushrooms, fresh oregano and chives...let me tell you... this was fricken good! Most of these ingredient's were leftover in my fridge. I had no clue as to what would come out at the end and I was really happy with this dish.

Many Pardons....

Hello All,
Its been a long July. Sorry for the delay in posts, I know this is a blog of my cooking but I just couldn't get my grasps on blogging.We lost a great friend due to a battle with nature he could not win. Kenny was one of the best souls I've ever come across on this earth. He did not judge you and excepted you with open arms. He became my friend when others would not. I will truly miss this fucking dude.
Here is Kenny sinking a putt with my folks about 2006. He was pretty much down to do anything.
And again Kenny showing off what a few cases of beer and couple pounds of Poki can do...
When I first met Lillie Brown as Kenny's girlfriend I was instantly happy that he had found a great lady to share his life with. Lillie is an amazing person that would punch you in your stomach just to show you a little love...heh heh heh. Kenny was loved by all and hated by pretty much none.

Too hot for Africa out there


I spent this July 4th weekend up in Vermont I guess while we were up there the weather was good in NYC, because now its rediculous! 103???

              I wish I could bring this thing home with me

                          So I can do this in it when its 103 outside
                         And of course a cold dunk!
I have come to realization that I cant bring a whole river system home nor do I have the room for it in my Apartment. So what you can do when the weather is "too hot for Africa out there" is to stay hydrated and eat cool...

 Cold Soba noodles is a perfect way to eat cool and beat the heat.... that and some ice cold brewski's

Just Chillin


I got a craving for Chili last night at 830pm ran down to the store before closing and made Chili. I keep it simple with mines.... it can be made in so many ways. How do you make chili?

I do like to top it off though... Lil Cheese, Sour Cream & Onion aint hurt nobody... After a bowl of this you too will be Chilling.

The Verdict...Oven Kalua Pig


Wow. How I manage to wait this long to make this dish at home. DISSCLAIMER: THIS DOES NOT BEAT WHAT YOU CAN MAKE IN AN IMU AS NOTHING CAN TOP AN IMU. but it sure does taste fricken good when youre 5000 miles away from home! Alittle Liquid smoke, salt, cabbage, and love made this a WINNER!!!
 Tender for a fork....Just da way we like it.
Done Shredding.
After all that shredding transfer to a pot add some broth and cabbage and you are done!

sriracha wings


Made some wings the other night. Kinda based on the standard Buffalo wing but using Sriracha instead of Franks (which is awesome). I added a bunch of butter and brown sugar to the Sriracha sauce and cooked it down. The butter mellows out the intense flavor of Sriracha while the brown sugar adds a nice sweet bite. These wings came out tasty!

On Top Of Spaghetti....


Last minute I decided to make spaghetti and meatballs. How I didn't get a single splash of sauce on my white tee while making this is beyond me, I guess the stars were aligned and all was well in the universe... I added panko, fresh thyme, fresh garlic,onion & garlic powders, Salt & Pepper, lil wine, and dried oregano to some ground beef to roll some great meatballs.


Sauteed some chopped up broccoli rabe with garlic to add some veggies to the meal as well. So simple so Delicious!
