Mah Ma Po Tofu

I've Been making variations of this dish for a minute now, I tend to like it on the milder side of things...In this version I used a ton of minced ginger and garlic that I sauteed with the pork. this gave it an amazing sweetness to it. I added peas, carrots, black bean sauce, chili sauce, vegetable stock, corn starch, jalapenos, and green onions to make this one a winner.
I added fresh peanuts as a garnish which gave it a nice crunch and flavor to the dish...Honestly we couldn't stop eating it! The ginger made it zing!
